I must have made breakfast too early this morning, or maybe I just didn’t eat enough, because this delightful baked oatmeal came out of the oven at 10:30 a.m. Yes, you read that right—10:30! One of the perks of being a stay-at-home mom is that no one tells me when I can take a break and enjoy something so comforting and delicious.
This recipe is simple, wholesome, and just a little bit indulgent—perfect for a weekend morning, a cozy breakfast, or even a fun snack.
Ingredients:

2 cups old-fashioned rolled oats

1/3 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 cup chocolate chips (I try to use just enough to cover the oatmeal without going overboard)

3/4 cup sliced strawberries (frozen works great!)

1 sliced banana

2 cups milk

1 large egg
-
1 teaspoon homemade vanilla
Directions:

Mix all the dry ingredients together in your baking dish.

Sprinkle the chocolate chips and fruit on top, gently pressing some into the oats.

Whisk together the milk, egg, and vanilla, then pour over the oats and fruit.

Bake at 350°F for about 35 minutes.
Tip for leftovers:
Since we don’t use a microwave, I scoop a portion into a small pan and warm it gently on the stovetop for about 3 minutes. It heats evenly and stays warmer longer than if you nuked it.
