This recipe might as well be called Blessing Soup. I was first introduced to it at a MOPS Christmas dinner, where another mom brought a crock of it to share. She told me it only had four ingredients—yes, just four!

1 bag hash browns
For a busy mom, a recipe that’s simple, requires no prep, and can be thrown in a crock pot is a true blessing. I’ve made this soup many times, and it’s always creamy, comforting, and delicious. The best part? It stays warm in the crock pot, so the family can eat whenever our schedules finally align.
On days when I have a little extra time, I like to add a few extras: cubed ham from a neighbor, a bag of frozen corn from my brother, or diced carrots for a little extra color and nutrition. Each time I taste it (for quality control, of course!), it’s just as comforting and flavorful as the first time I tried it.
This recipe can also be made on the stove top if you prefer, though I love the ease of the crock pot. I usually start it mid-morning around 9 or 10, and by dinnertime, it’s ready to bring everyone together around the table.
Sometimes the simplest meals carry the biggest blessings. This one definitely does.
